{"id":126,"date":"2021-03-09T16:05:49","date_gmt":"2021-03-09T16:05:49","guid":{"rendered":"http:\/\/reggioblog.it\/?p=126"},"modified":"2021-03-10T16:08:33","modified_gmt":"2021-03-10T16:08:33","slug":"risotto-asparagi-e-spek","status":"publish","type":"post","link":"https:\/\/reggioblog.it\/index.php\/2021\/03\/09\/risotto-asparagi-e-spek\/","title":{"rendered":"Risotto Asparagi e Spek"},"content":{"rendered":"\n<p>Una ricetta per un primo piatto primaverile che presenta una combinazione di sapori veramente particolare,<br>da gustare con un vino bianco leggero e fruttato Meglio se un Gew\u00fcrztraminer.<\/p>\n\n\n\n<p>Ingredienti:<\/p>\n\n\n\n<p>400 grammi di riso<br>300 grammi di asparagi surgelati<br>200 grammi di spek tagliato a stiscioline<br>brodo vegetale q.b. per la cottura del riso(circa un litro)<br>vino bianco 1\/2 bicchiere<br>1 cipollina tritata<br>100 grammi di burro<br>4 cucchiai di olio<br>70 grammi di parmigiano grattugiato<br>2 cucchiai di panna da cucina<br>sale e pepe q.b.\u00a0<\/p>\n\n\n\n<p>Preparazione:<\/p>\n\n\n\n<p>Togliere dal freezer gli asparagi e lasciarli un p\u00f2 a temperatura ambiente.Prendere un tegame per il risotto e far rosolare sul fuoco,la cipollina tritata con l&#8217;olio,50 grammi di burro e dopo qualche secondo aggiungere lo spek e le punte di asparagi tagliate a rondelline.Lessare i gambi di asparagi in acqua salata e poi frullarli e tenerli da parte per poi aggiungerli a fine cottura del riso.Aggiungere il riso al soffritto di cipolla,asparagi e spek,tostare per qualche secondo e poi sfumare con il vino bianco.Aggiungere poco alla volta sempre mescolando il brodo caldo fino a cottura del riso.Prima di spegnere il fuoco ,aggiungere al riso il frullato dei gambi di asparagi e i 2 cucchiai di panna.Amalgamare il tutto sul fuoco e spegnere.A fuoco spento mantecare il risotto con il resto del burro e il parmigiano,regolare di sale e pepe e servire.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Una ricetta per un primo piatto primaverile che presenta una combinazione di sapori veramente particolare,da gustare con un vino bianco leggero e fruttato Meglio se un Gew\u00fcrztraminer.
